We really enjoy having grilled lamb during our weekends. It really pays off to be a loyal customer at you butchers - we get the freshest and most tender bits. This time we got amazing lamb chops, and this is what we did with them (eat them obviously, but before that):
LAMB CHOPS - 6
RED ONION (sliced) - 2
CORIANDER (big chunks) - 1 cup
GREEN BELL PEPPER (sliced) - 1
LIME OR LEMON (juice) - 2
OLIVE OIL - 50 ml
SALT AND PEPPER - to taste
First marinate the lamb with all ingredients listed - coriander, onions, bell pepper, salt, pepper, olive oil and lime juice. Mix well and kind of massage the lamb. Leave to marinate for about 2 hours.
Heat the grill and put on the lamb chops for about 3 to 5 minutes each side.
We use the onions from the marinade as well. Put them in a pan without liquids. Sauté for about 20 minutes till they are soft. Then add a tablespoon of sugar and stir till the onions are golden brown and all sugar is dissolved. Tasty!
