An easy cake recipe is always welcome. This one I found in a wonderful blog:
Cake is quite light and not terribly sweet with a bit of lemon zing. My husband even had seconds, and he just doesn't eat sweets.
BUTTER OR VEGETABLE OIL SPRAY
ALL PURPOSE FLOUR - 1¾ cup
BAKING POWDER - 1½ tsp
SALT - ½ tsp
EGGS - 4
SUGAR (I use raw sugarcane sugar in this recipe) - 1 cup
SUGAR (for sprinkling) - 2 tbsp
VANILLA EXTRACT (I used vanilla paste) - 2 tsp
LEMON ZEST (finely grated) - 2 tbsp
LEMON JUICE (for the dough) - 1 tbsp
OLIVE OIL - ¾ cup
RASPBERRIES - 1 cup
PISTACHIOS (chopped without salt and not roasted) - 3 tbsp
LEMON JUICE - ¼ cup
SUGAR - ¼ cup
Preheat the oven to 180° C. Grease the cake pan.
Mix the dry ingredients - flour, baking powder, salt.
In a separate bowl with electric mixer beat the eggs with 1 cup sugar till they form fluffy but firm peaks (about 5min). With a mixer on, but on a slower speed, mix in vanilla extract and 1 tbsp lemon juice. Then gradually mix in olive oil, stopping as soon as the oil is mixed in. With a spatula fold in the dry ingredients and lemon zest.
Pour the dough in cake pan, arrange raspberries on to, then pistachios and sprinkle with sugar (2tbsp). Bake until the cake batter doesn't stick on a wooden skewer when pierced - about 45 to 55 min. I preferred to bake 45 min, the cake seemed to be juicier. But it really depends on an oven.
While the cake is baking in a small pot heat lemon juice and sugar. Stir and heat for about 5 minutes to make the syrup. Leave to cool.
When the cake is ready, take it out of the oven and straight away brush with lemon syrup. Leave to cool completely before taking out of the pan. I think it's worth a try to pierce the cake a bit before brushing with syrup. I'll try that next time I make this cake.
You can have it with ice cream or cream. You can have it for breakfast with your morning coffee. Endless options!
The good thing is than even if you muck up the order of mixing everything together it still comes out good! I did that the first time I made this cake. Shit happens.
